Good Morning... This rainy Monday seems like a good time to fire up the crock pot and make your quarantine a little cozier. What's better at the end of the day than walking to the kitchen and dishing something delicious out of the crock pot? Today's recipe in the Quarantined in the Kitchen series from the QCC Veterans Club is the definition of comfort food. There's also a good chance you may have all of these ingredients in your fridge and pantry. Ready?

Crock-pot Beef Stew

  • 1 lb. stew meat (cut into chunks)
  • 2 potatoes diced (fun substitute... sweet potatoes)
  • 1 onion diced
  • 2 cloves minced garlic (substitute 1 tsp jar garlic or ½ tsp garlic powder if you do not have cloves on hand)
  • 2 carrots diced
  • 1 10.5 oz can condensed cream of mushroom soup
  • 1 8 oz can tomato sauce
  • 1 Cup beef broth
  • 1 Small bag Frozen Sweet Peas

Directions:

  • Add all ingredients to crock-pot except peas
  • Cook on low for 8 hours

(Add Frozen Peas for the last hour of cooking)
